Sparkling Summer Cherry Honey Cooler

What you’ll need
- 2 tbsp Fitzola Raw Wildflower Honey
- 50g fresh cherries
- 200ml soda / sparkling water
- 200 ml drinking water
- Basil leaves, to taste
Method
Step 1: Heat the water in a saucepan and bring it to a slow boil. Then add the honey and stir once. Bring to a simmer on low heat and let stay for 2 minutes. Then remove from the pan and pour the honey syrup into a bowl.
Step 2: Deseed your cherries and blend in a blender, until the cherries are pureed. Add a few drops of water if required. Once pureed, pour the cherries into the saucepan on low heat and let it warm for a minute.
Step 3: Pour the honey syrup back into the saucepan with the cherry puree and stir. Let it simmer. The puree and syrup should be nicely blended together. Pour into a container and let chill.
Step 4: Add ice cubes or crushed ice to two glasses, then add the honey syrup into the glasses and top up with soda or sparkling water. Add some basil for added flavour!
P.S: Add 30ml of your favourite gin or vodka for an extra kick!
