The Slacker's Shakshuka

What you’ll need:
- 10-12 large tomatoes
- 5-6 garlic cloves, chopped
- 1 onion, chopped
- 4/5 eggs
- 3-4 tbsps Shivalik's Tomato Salsa
- Old Hill Gouda Cheese
- El Diablo Baconite hot sauce
- Salt
- Pepper
- Olive oil
- Herbs to garnish (Arjun used basil)
Method:
Step 1: Blanch the tomatoes and dice into small cubes.
Step 2: In a pan, heat some oil and add in the chopped onions. Cook till translucent on medium heat.
Step 3: Add the garlic and toss for a minute.
Step 4: Add in the tomatoes and top with salt to taste. Let it cook down till your tomatoes are soft. Use a spatula to gently smash the tomatoes in your pan. (We want to keep the sauce chunky and not make it a paste.)
Step 5: Once your tomatoes are cooked, add in the Shivalik's Tomato Salsa and mix it well. Taste to adjust salt.
Step 6: Make 4-5 cavities in between the tomatoes and crack the eggs directly into these cavities.
Step 7: Grate the Old Hill Gouda cheese over the tomatoes and eggs and cover the pan. Reduce your heat to low and let the eggs cook for 4-5 mins. (Don’t overcook because the eggs will continue to cook with the residual heat of the tomatoes. Make sure the cheese has melted.)
Step 8: Crack some flaky salt and pepper. Garnish with the herbs. Top with El Diablo Baconite sauce.
Serve with toasted bread!
